SAUCE IDEA: Coconut peanut sauce with penne, broad beans and brocoli.

Coconut Peanut Sauce A tasty sauce can jazz up steamed vegetables, veggie burgers, pasta or rice and turn them into more substantial dishes.  

1 tbsp soy sauce

1/3 cup peanut butter

1 chopped spring onion

2 tsp grated raw ginger

3/4 cup coconut milk (equivalent to about half a 400ml tin)

1 tsp crushed garlic

1 tbsp freshly squeezed lime juice

1 tsp light brown sugar (or substitute with white)

A pinch of cayenne pepper or more to taste

Blend all ingredients together and heat gently. For a thinner sauce add a little water. For a tasty meal I add coconut peanut sauce to penne, broad beans and broccoli.
