Top chefs plan dazzling festival dishes

Victoria Park is set to transform into a foodie paradise for Taste 2012 and Aucklanders can now start drooling over the menus.

The chefs included in this year's event have each named the three dishes they will serve from November 15, with options ranging from classic pasta to the unusual such as carrot cake snapper.

"The event continues to evolve in new and exciting ways with a fantastic range of restaurants to try, and numerous demonstrations and master classes on offer," festival organiser Rob Elliot said.

First-time Taste restaurant Toto's will show-case the best of Italy with three mini-meals including a porchetta bun, spinach pasta and salmon ballavista with crayfish sauce.

Italian is the order of the day for Poderi Crisci's team as well. On their menu is organic shredded milk mozzarella, Insalata Di Mare and a cannelloni of confit duck, wild mushroom, porcini sauce, parmesan and truffle oil.

Mexico's chefs are dishing up prawns in a chipotle mayonnaise, Guajillo dry rubbed beef skirt taco with roast green tomatillo, candied and Mexico fried chicken with citrus powder and jalapeno mayonnaise.

Seafood restaurant Kermadec will take a dip in the sea with tuna tartare, as well as a wild deer dish. It will also showcase some scientific cooking with the Nayarit milk chocolate balloon.

And Fish restaurant from Princes Wharf will serve up a menu of gulf snapper, pepper cured trevally fillet and a Sri Lankan-inspired prawn curry.

High Street's Vivace turns 20 this year, and the Taste menu looks back to some of the restaurant's original dishes like sweet chilli piquante peppers, Moroccan lamb and eggplant ragu.

Meanwhile Clooney, winner of the 2012 Metro Magazine's best fine dining restaurant, has created a menu that includes salmon with orange peel, saffron and fennel pollen; razor back pig belly and a pecan crème brulee.

Masterchef's Simon Gault brings Euro Restaurant and Bar to life with crab and prawn, jalapeño crème fraiche sauce, tobiko and tuna wafers, followed by a roasted lamb rump and a caramelized white chocolate cheesecake to finish.

The Commons in Takapuna brings with it a quirky menu combination: carrot cake snapper, duck penang and a dish named Valrohna Chocolate and Violet, which includes an almond sandcastle.

And finishing off the tasty line-up, Depot's Al Brown and Kyle Street offer up oysters with chardonnay vinegar and shallots, BBQ-pulled pork sliders and a classic, lemon meringue pie.
