It's cucumber season, so if your garden is brimming with them, then here's a pickle recipe so you can savour the vegetables throughout the year. Jars of cucumber pickle also make great gifts for friends.

Refrigerator cucumber pickle
1 large cucumber
2-3 tsp plain salt
1 tsp sugar
3 Tbsp vinegar
1 Tbsp dill, finely chopped

Slice unpeeled cucumber finely, spread out on a large plate and sprinkle with the salt. Leave for a minute or two then tip all into a sieve or colander in the sink and let drain for 30 minutes.
The slices need to be as dry as possible so either roll in a teatowel and squeeze out the liquid, or use a salad spinner.
Add sugar to the vinegar, stir to dissolve. Put cucumber slices in a wide-mouth glass jar, add sweet vinegar and give the jar a shake to distribute the vinegar.
Scatter the dill over and stir carefully in. Cover, refrigerate and use as needed.
