Recipe of the Week: Double chocolate banana cake

Banana cake is a popular treat and this week we have an easy double chocolate banana cake recipe, sent in by Chris Wilding.

INGREDIENTS

1.5 cups self-raising flour        
½ cup flour                  
¾ cups caster sugar               
½ cups brown sugar, firmly packed       
2 tablespoons cocoa               
½ teaspoon soda
50 gms dark chocolate, melted
125 gms butter, melted
2 eggs
½ cup milk
1 cup mshed banana (2 or 3 bananas)


METHOD
                       
Line the base of a 23cm round cake tin, then spray with cooking spray.
Heat oven to 180deg C.
Sift all dry ingredients, add brown sugar.
Add bananas, then add melted butter and chocolate (I melt the chocolate and butter together for around 1 minute in the microwave).
Beat milk and eggs, beat gently till combined.
Add this to the dry ingredients and spoon into cake tin
Bake for approximately 50-60 minutes (depends on oven).
Ice with chocolate butter icing
