Chocolate, fig & ginger fruit mince
This combination of exotic flavours forms a rich fruit mince mixture with a dense texture. Use this mix in cooking as you would classic Christmas mincemeat and be surprised by the slowly unveiling taste sensation.
3 cups finely diced dried figs
1 cup sultanas, roughly chopped
1/4 cup finely chopped crystallised ginger
150g dark chocolate, roughly chopped
1 apple, peeled and grated
3/4 cup brown sugar 1 cup brandy
Mix together all ingredients in a bowl, cover and leave in a cool place for 2 days, stirring occasionally. Pack into sterilised jars and seal well. Leave to mature for at least 1 month before using.
Makes 6 cups.
