Chef Sid Sahrawat has created more than 170 new dishes so far this year, surprising diners with an ever-changing tasting menu at his Auckland restaurant, Sidart.
Each 'Test Kitchen' evening requires around 30 hours of preparation - from brainstorming sessions for each dish on a Friday, to recipe testing over the weekend, and front of house briefings on a Tuesday.
Test Kitchen diners receive an envelope containing a list of ingredients - "beetroot", "duck" or "blood orange" - and what follows is eight courses designed with that ingredient in mind. Each Test Kitchen menu is priced around $145 per person, plus wine matches.
Earlier this month the Sidart Tasting Club featured eight of Sahrawat's own favourite Test Kitchen creations to serve to diners, over two memorable evenings. The event took days of preparation - from meetings to develop the concept, working through the menu and its eight wine matches, event decoration and design, to briefing the front of house team on the menu.
