Summer berries are currently at the peak of their short, temperamental season, so why not take full advantage of that and mix yourself something light, refreshing and delicious for a stunning, sunny evening?

This Summer Berry Collins is incredibly simple and easy to make, it uses all natural ingredients and features the crisp clean snap of premium vodka. 

When mixing a light drink like this, a quality vodka is key because you want to do the fresh produce justice. A good spirit will fit snuggly with the other components without overpowering with the heat or oiliness you can taste in inferior products.

I've chosen Ketel One, which is a pure wheat vodka from Holland with over 300 years of history. It's incredibly crisp and clean, but also has a full body so is great when mixed or even just poured over ice with fresh lime.

Most cocktails containing a good dose of citrus will call for sugar or syrup to balance, but with ripe berries currently at their sweetest you can rely on their own natural sugars to sweeten this for you.

SUMMER BERRY COLLINS

4 lime wedges
2 ripe strawberries
2 raspberries
2 blackberries
Crushed ice
60ml of premium vodka
Fresh mint & berries for garnish
Soda water to finish

1. Simply muddle or pulverise the lime wedges, ripe strawberries, raspberries and blackberries in a tall glass. 

2. Add 60ml of premium vodka and fill with crushed ice and top with soda water.

3. Give it a quick swizzle/stir.

4. Garnish with more berries and fresh mint

This is so simple, natural and fresh that you could almost get away with counting it as two of your five + a day.
