Meringues with Kiwi Fruit, Strawberries & Passionfruit Sauce
Preparation Time 15 minutes | Cooking Time 40 minutes | Serves 4
¾ cup caster sugar
½ teaspoon vinegar
½ teaspoon cornflour
1 egg white
¼ teaspoon vanilla
2 tablespoons boiling water
20g (1 tablespoon) Flora pro-activ Original/Buttery
1 tablespoon sugar
2 passionfruit, pulp removed
1½ teaspoons arrowroot, blended with 3 teaspoons lemon juice
1-1½ tablespoons orange juice
2 kiwi fruit, peeled and sliced for serving
1 punnet strawberries, hull removed and sliced for serving
1. Preheat oven to 120ºC and line a baking tray with baking paper.
2. To make the meringues, place sugar, vinegar, cornflour, egg white, vanilla and boiling water into the bowl of a mixer and beat for 10-15 minutes until thick. Spoon 4 even portions of mixture onto the prepared tray. Bake for 40 minutes or until cooked. Cool on the tray, before transferring to a cooling rack.
3. To make the sauce, place Flora pro-activ, sugar and passionfruit in a saucepan over a low heat. Mix until the sugar dissolves. Stir in the blended arrowroot and lemon juice. Stir until the mixture comes to the boil and simmer for 2 minutes. Add in sufficient orange juice to thin the sauce to a pouring consistency. Cool.
4. Serve meringues with kiwi fruit, strawberries and drizzled with passionfruit sauce.
