Keen fisherman Shaun Clouston is head chef and partner at Wellington dining institution, Logan Brown.

He started out with Logan Brown in 1996, before jetting off to Sydney to learn Aussie kitchen secrets, only to return to LB and take over the kitchen, crafting seasonal flavours that elevate beautiful local produce. In fact, his menus are so good, Logan Brown was recently awarded two Chef's Hats by the 2013 Cuisine Good Food Guide.

So, what lurks inside the fridge of one of NZ's best chefs? 

WHAT FIVE THINGS ARE ALWAYS IN YOUR FRIDGE?

1. Milk

2. Hoisin Sauce

3. Raspberry Jam

4. Organic Maple Syrup

5. Streaky Bacon

DO YOU HAVE A STANDBY, NEVER FAIL RECIPE THAT USES ALL, OR SOME OF THESE INGREDIENTS? 

In our house, with three little monkeys, Hot Cake Sunday breakfast is becoming the norm. Not all of the children like the smokey bacon and I often get told it's burnt and I should learn how to cook it properly. But the organic maple syrup is always a winner.

WHAT'S THE MOST EXOTIC THING IN YOUR FRIDGE? 

Probably Lup Cheong Sausage (dried sweet Chinese pork Sausage) and Home Made Kim Chi (Korean Fermented Cabbage).

WHAT DO YOU NEVER STORE IN THE FRIDGE?

An uncovered container of Kim Chi. This makes my wife very displeased.

WHAT DO YOU DREAM OF FINDING IN THE FRIDGE?

Getting home after a long and rather late evening service, the dream sometimes becomes reality. A beer and a cold pork and salad sandwich, sometimes the simple things in life are the best!
