THE GODFATHER OF FUSION: Chef Peter Gordon.

Peter Gordon, the Kiwi chef who grew up in Whanganui, is often credited with bringing 'fusion' cuisine to the world.

His inventive, creative cooking has won him scores of accolades and seen him open award-winning restaurants in New Zealand and the UK.

He's written seven cookbooks and is involved in consulting for other food businesses. His latest project is a new readymade food range, Every Day, which includes restaurant-quality mash, risotto and pork dishes.

WHAT FIVE THINGS ARE ALWAYS IN YOUR FRIDGE? 

1. Baobab chilli sauce.

2. Every Day Kumara Miso Mash (saves me making it from scratch when I get home at the end of a long day!)

3. Yoghurt.

4. Butter.

5. Two bottles of Dom Perignon - currently a 1996 and a 2002.

Baobab smoked chilli and ginger relish.

Onions or garlic.

WHAT DO YOU DREAM OF FINDING IN YOUR FRIDGE?

Whitebait! We don't have it in the UK. As soon as I returned home, I went to Farro, bought six pounds and went home to make whitebait fritters. It wasn't enough, so the next day I returned to buy some more, but Farro told me that [TV presenter] John Campbell had purchased their entire stock!
