Hide this bread as soon as it comes out of the oven, or it will suddenly disappear!

This is a delicious, easy to make primal/paleo, dairy-free loaf that is full of yummy goodness. 

Dry mix
1/2 cup coconut flour
1/2 cup almond meal or flour
1/4 cup coconut (desiccated)
1tsp cinnamon
3/4tsp baking soda
Pinch of salt
Wet mix
4 eggs (free range)
1/4 cup honey (preferably raw) or 1/4 coconut sugar
1 tsp pure vanilla extract
3 medium ripe bananas - mashed
1/2 cup (125g) melted coconut oil

 

Line with cooking/parchment paper a small loaf tin 10.5 x21.5mm (4 x 8.5in).
Combine dry mix and mix together to smooth any lumps.
Whisk the wet mix - eggs, honey and vanilla.
Stir in the mashed banana.
Combine with the dry mix.
Lastly stir in the melted coconut oil.
Tip the batter into the loaf pan and smooth the top.
Place in the oven for around 35 mins - though check after 25mins using a skewer which should come out clean.
Remove from oven, cool slightly in the pan then place on a wire rack to cool for 15 to 20 minutes.
 Place on a bread board and use a serrated bread knife to gently slice.
