Here's a super-fast after work dinner that doesn't break the bank.

It's made from seafood marinara mix from the supermarket (prawns, white fish, salmon, mussels and calamari), stir-fried with fresh asparagus and spinach.

It also has garlic and chili (from a jar because I'm a busy woman), plus a bit of salt, pepper, lemon and fresh parsley. You could easily have it with rice, but I don't bother because I sit at a desk all day.

I normally don't like frozen veges, but frozen spinach really is a secret weapon. It's just as yummy as cooking it up from fresh, and you can put it in anything - scrambled eggs, curry, lasagne or cannelloni, or just a stir fry like this to add a bit of substance!

Asparagus is in season right now, so all these ingredients are cheap, mega-healthy and most importantly ... delicious.
