Help get NZ cooking: Fresh Greek salad

1 small cucumber, peeled and cubed
1 juicy ripe tomato, cut in eight wedges
1 small red onion, qartered and separated into strips
Good amount fresh torn basil leaves  
Half a block creamy feta cheese, cubed
Lots of black kalamata olives

1. Put all ingredients in to a bowl and pour over a good dollop of a fragrant New Zealand olive oil. Not an imported olive oil as they are pretty rancid.

2. Add a good grinding of pepper, some salt and eat.

Best at room temperature and perfect for a hot day.
