Help get NZ cooking: Falafel wraps
This is a really quick and easy meal, either for lunch or dinner. It's super cheap and uses chickpeas in a way that is tasty and healthy.
It leaves no excuses, is completely homemade, and you can create that authentic flavour and feel good doing so.
Even better, you can make your own wraps for a fully homemade meal.
|2 cups Chickpeas, blended or mashed|
|1 1/2 teaspoons Cumin|
|1/2 teaspoon Salt|
|4 - 6 cloves Garlic, finely diced|
|1 medium Red Onion, finely diced|
|1 teaspoon Coriander seeds, or a handful torn fresh Coriander|
|1 large handful chopped Parsley|
|Pepper, to taste|
|1 teaspoon Baking Powder|
|OPTIONAL: 2 - 4 tablespoons Flour|
2. Roll spoonfuls of the mixture into balls.
3. Drop into hot oil. Shallow fry until brown and crispy.
