Breakfast burritos are popular in the American SouthWest.

They're a quick food option and easy to make at home.

This recipe only requires 15 minutes preparation and cook time for eight tasty, healthy breakfasts on the go.

8 small tortillas
8 large eggs
1/2 cup milk
2 tsp butter
1 small onion, diced
1 medium green pepper, diced
1 small red pepper, diced
1/3-1/2 cup shredded cheese
2 cooked and chopped spicy sausages
2 pieces of chopped bacon
Salt and pepper to taste
Dash of hot sauce (optional)

1. Melt the butter in large pan and add diced the vegetables, bacon and sausage. Sauté over a medium heat until soft.

2. Meanwhile, in a medium bowl, whisk the eggs with the milk. Add salt, pepper and hot sauce to egg mixture.

3. Once the vegetables are soft, pour in egg mixture in to pan. Cook on low heat until eggs are no longer runny. Stir occasionally.

4. Turn off heat. Sprinkle cheese over eggs and let melt.

5. Using slotted spoon, put egg mixture in to tortillas. Serve immediately.

Alternatively, wrap with paper towel and foil and freeze. Reheating instructions: Remove foil. Microwave for one minute until warm.
