Ultimate BBQ recipes: The perfect rub
Steak, chicken, pork, and even a great burger demand the perfect rub to bring out the flavour of meat cooked on the BBQ, preferably over an open flame.
Prepare a large batch of this rub at the start of summer, and you're set for the entire season.
Unlike rubs used for slow smoking, this does not contain sugar, which will burn easily when cooked over an open flame.
|1/3 cup salt|
|1/3 cup paprika|
|1/4 cup dried onion flakes|
|1 teaspoon garlic powder|
|1 teaspoon ground black pepper|
|1 tablespoon cumin|
|2 tablespoons chili powder (mild or hot depending on taste)|
1. Thoroughly blend all ingredients and store until needed.
2. Apply a generous amount to meat at least a couple of hours before cooking.
