Steak, chicken, pork, and even a great burger demand the perfect rub to bring out the flavour of meat cooked on the BBQ, preferably over an open flame.

Prepare a large batch of this rub at the start of summer, and you're set for the entire season.

Unlike rubs used for slow smoking, this does not contain sugar, which will burn easily when cooked over an open flame.
