Ultimate BBQ recipes: Summer salmon
The barbecue season is kicking off so we're in the market for ultimate barbecue recipes to get our grills firing and our taste buds watering.
Stan Dubious shares his recipe for salmon with a summer vinaigrette.
|4 salmon fillets|
|1 tbsp parsley|
|1 tbsp, chervil|
|1 tbsp chives|
|1 tbsp shallots|
|1 tbsp tarragon|
|1/2 tbsp Worcestershire sauce|
|100g Tuimato sauce|
|8 drops of Tabasco sauce|
|300ml virgin olive oil|
|50ml white wine vinegar|
1. Wash and finely chop all the herbs for the vinaigrette.
2. Mix together with the rest of the vinaigrette ingredients and set aside.
3. Pan fry the salmon on the barbecue until cooked but still pink in middle. A few minutes each side should do it, depending on thickness.
4. Plate the salmon and top with vinaigrette and add torn parsley as a garnish if desired.
