Meals in 30: English muffin mini-pizzas

I stumbled across this while on an eating plan to help me lose weight and watch portion sizes (the programme worked well and we had a lot of very yummy and healthy recipes).

These toppings are my suggestions but almost anything in the fridge works well - we've used beef or salami instead of chicken

English muffins (1 per person works well)
Pasta sauce/tomato sauce/tomato paste (1 tsp per muffin)
Spinach
Mushrooms
Capsicum
Chicken (cubed and cooked or shredded)
Cheese

1. Split the muffins in half, these form mini pizza bases
2. Spread about 1tsp of sauce per muffin half
3. Add chopped mushrooms, capsicum, mushrooms, or assorted veges
4. Add chicken, or other meat, or no meat if that's how you roll
5. Top with some grated cheese
6. Bake in oven for about 10-15 minutes at 180 or until the cheese is melted and a bit browned and the muffin base is sufficiently toasted.

I usually serve two halves per person with a side salad.

A very quick and easy dinner that we all love time and again.
