Recipe: Pepper and sesame crusted salmon

NICELY FISHY: Heart-healthy salmon with lots of veges.

Here's something nice and fresh to make and share with company.

Combine sesame seeds and pepper on a sheet of baking paper. Press salmon fillets into mixture to coat.

Spray a large non-stick frying pan with oil and set over a high heat. Add salmon and cook each side for 2-3 minutes or until golden and just cooked through. Remove pan from heat, cover to keep warm and set aside.

Place peas and beans in a medium-sized heatproof bowl and cover with boiling water. Leave to stand for 2 minutes then drain.

Combine peas and beans with onion, mint and feta in a large bowl. Divide mint peas among serving plates, top each with a reserved salmon fillet and serve with lemon wedges and potatoes.
