This quick chocolate mousse is so easy to make you could get the kids to do it while you lie on the sofa, issuing orders.

QUICK CHOCOLATE MOUSSE WITH SUMMER BERRIES

250g dark chocolate, chopped
2 eggs, lightly beaten
200ml cream, lightly whipped
2 tsp vanilla extract
1 punnet blueberries
1 punnet raspberries
1 punnet strawberries, halved

1. Melt the chocolate in a bowl over a pot of simmering water (or in the microwave), then remove from heat and stir in the eggs.

2. Add the cream and vanilla and stir until smooth.

3. Divide mixture evenly between 4 x 150ml dishes and refrigerate until firm.

To serve, divide berries between plates, sprinkle with icing sugar and accompany with mousse pots.
