Last weekend my daughter had her first ice block experience. After the first taste, she looked at me with her big blue eyes and said 'Cold... make warm Mum'. Err... that may be a little difficult. But making these delicious - and reasonably nutritious yoghurt popsicles is anything but hard.

ZESTY YOGHURT POPSICLES
If oranges are not available these can also be made with 1/2 cup frozen berries whizzed up. Chia seeds are optional, they add extra nutrition and act as a stabiliser as they absorb the liquid and become jelly-like. They are small seeds that look a little like sesame seeds but carry a far greater nutrient punch including protein, omega 3, calcium, magnesium and much more.
|2 free range egg whites|
|2 Tbsp sugar|
|1 cup natural yoghurt|
|Zest of 2 oranges|
|Juice of 1 orange|
|1 Tbsp chia seeds (optional)|
|1. Whip the egg whites until they form stiff peaks. Add sugar and whisk till glossy.
2. In a large bowl combine the yoghurt, chia seeds, orange zest and juice (cut up the spare orange minus its zest for any littlies to munch on).
3. Use a spatula to gently fold through the egg whites until just combined. Spoon the mixture into ice block molds and freeze for at least six hours.
When ready to eat remove from the freezer for five minutes to loosen the popsicles. Enjoy sitting in the garden in the sun.
