Chop Chop: Steak with grilled cos lettuce & blue cheese dressing

BEEF STEAKS, GRILLED BABY COS LETTUCE & BLUE CHEESE DRESSING
Serves 4

2 cloves garlic
sea salt
2 tablespoons thyme leaves
2 tablespoons olive oil
400g beef steaks (I used flat iron)
70g blue cheese
¼ cup thick Greek yoghurt
¼ cup mayonnaise
juice of ½  lemon
2 baby cos or gem lettuce


Mash the garlic with the sea salt. Add the thyme and finely chop. Put into a bowl, add the oil and mix. Brush the mixture onto both sides of each steak.

Put the blue cheese, yoghurt , mayonnaise and lemon juice in a food processor, add a splash of water and blend until smooth.

Cut the lettuce into quarters lengthwise. Salt the steaks and grill for 3 minutes on each side, then set aside on a plate to rest for 5 minutes.

Grill the cos for a few minutes on each side and put onto a platter. Slice the steak thinly.

Drizzle some dressing over the lettuce, top with the steak slices, drizzle some more dressing over and serve.
