Chop Chop: Watermelon, kingfish & avocado salad
Ginny Grant's simple raw fish salad is summer in a bowl.
1 teaspoon peeled, grated ginger
1 clove garlic, mashed with a little salt
1 chilli, finely chopped
1 tablespoon lime juice
juice of ½ an orange
2 teaspoons of soy sauce
1 teaspoon olive oil
1 teaspoon sesame oil
¼ cup chopped coriander
pinch of sugar
wedge of watermelon, peeled, diced
1 avocado, peeled, stoned, diced
300g skinless, boneless kingfish, diced
Put the ginger, garlic, chilli, lime juice, orange juice, soy sauce, oils, coriander and sugar in a small bowl and stir to combine.
Put the watermelon, avocado and fish in a large bowl. Add the dressing and stir gently to combine. Serve in bowls.
