Pickled plums with washed rind cheese.

These quick and easy plums are great with cheese – here I have paired them with a Puhoi Valley washed rind. Puhoi's French cheesemaker Franck Beaurain makes some delicious French-style cheeses and I found the washed rind paired beautifully with the sweet-salty-sour plums.  

Serves 6 / Preparation 5 minutes plus resting time

INGREDIENTS

250g plums, halved, or quartered if large, stones removed 
1 teaspoon flaky sea salt
1 tablespoon sugar
2 teaspoons white wine vinegar
washed rind cheese (at room temperature) and crackers to serve

Put the plums in a bowl with the salt and toss well. Set aside for 10 minutes then stir in the sugar and vinegar and set aside for another 10 minutes before serving with the cheese and some crackers. 

WINE MATCH A soft-textured, off-dry pinot gris – go for the Nautilus Marlborough Pinot Gris 2015.
