Recipe: Marinated mushroom and chorizo skewers

Mushrooms, lemons, olive oil, garlic, herbs, chorizo


Cut half a dozen large flat and button mushrooms in half.

Place in a ceramic bowl, add the juice of a lemon and about the same amount of olive oil.

Stir through several crushed cloves of garlic and a handful of chopped fresh herbs, seasoning well.

Leave to sit for several hours then thread onto pre-soaked skewers with pieces of chorizo.

Grill and serve with lemon wedges and a scattering of extra fresh herbs.
