Recipe: Speedy noodles with mushrooms and bok choy

Hokkien noodles, peanut oil, garlic, mushrooms, bok choy, spring onions, sesame oil, sesame seeds, sweet chilli sauce, oyster sauce, soy sauce.


Prepare hokkien noodles to packet instructions (200g noodles will serve 2).

Add peanut oil to the wok, and stir-fry in separate batches: 2 sliced garlic cloves until crisp, mixed sliced mushrooms, several bunches of separated bok choy leaves and sliced spring onions.

To the empty wok add a teaspoon each of sesame oil, sesame seeds and sweet chilli sauce, and a tablespoon each of oyster sauce and soy sauce.

Return all the ingredients to the wok including the noodles and toss to heat through before serving.
