Recipe: Pork chops with pear salsa
In the latest in the Chop Chop video series, Cuisine's Ginny Grant shows that pork and pear makes a delicious autumnal match.
1 pear, cut into a small dice
1 roasted red capsicum (jarred), diced
1 small shallot, finely chopped
1 clove garlic, finely chopped
½ small red chilli, finely chopped
¼ cup coriander leaves, finely chopped
2 teaspoons white wine vinegar
1 tablespoon extra virgin olive oil
4 pork chops*
drizzle of olive oil
2 teaspoons thyme leaves, chopped
In a bowl mix the pear, capsicum, shallot, garlic, chilli and coriander. Dress with the white wine vinegar and extra virgin olive oil. Season to taste and set aside.
Drizzle the pork chops with a little oil, scatter over the thyme and season generously with salt. Grill (or pan-fry) for 4-5 minutes on each side (depending on thickness). Rest for 5 minutes before serving with green beans, mashed potato and the pear salsa.
*NB In the video, two pork chops are cooked, but the salsa makes enough for four.
