Recipe: Spiced apple, maple and walnut tray bake

An apple slice that will take you back to your childhood.

This simple recipe has stunning traditional flavours. The smell of it baking may take you back to childhood, with its cinnamon, nutmeg, brown sugar and butter.

INGREDIENTS

Topping:
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¾ cup walnut pieces, roasted*

Filling:
3 apples, peeled, cored and thinly sliced
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon maple syrup

Batter:
250g butter, melted
2 tablespoons maple syrup
2 teaspoon vanilla extract
1½ cups milk
3 eggs
2½ cups self-raising flour
1 cup caster sugar

Extra: 
¼ cup maple syrup

METHOD

Heat oven to 160°C. Grease and line a metal baking tin about 20 x 30cm.

Combine all the topping ingredients in a bowl. Toss all the filling ingredients together in another bowl.

Place all the batter ingredients in another large bowl and whisk until smooth. Pour half the batter into prepared tin then arrange apple filling over it. Spread remaining batter mixture on top. Sprinkle topping mixture evenly over top then drizzle over the extra maple syrup.

Bake 45-55 minutes or until golden and firm. Cool slightly before cutting. Serve warm with cream or ice cream.  Serves 10-12

* To roast the walnuts, spread them on a baking tray and bake at 150°C for 10-15 minutes. Cool completely before using.
