Recipe: Hummingbird cake from Jam at Queenwood, Hamilton

This week Michelle Mourits asks how to make the hummingbird cake from Jam at Queenwood.
Mourits says she recently visited Jam cafe and discovered its cakes. "They have the most delicious gluten free hummingbird cake in their cabinet of goodies. I would so love the recipe."
The Hamilton cafe was happy to share its method and we are pleased to provide the recipe.
2 cups gluten free flour
1 ½ cups sugar
½ tsp cinnamon
½ tsp baking soda
1 ½ cups oil
1 ½ cups walnuts
1 ½ cups crushed pineapple
3 brown mashed bananas
½ cup pumpkin seed
½ cup sunflower seeds
½ cup poppy seeds
250g softened butter
250g cream cheese
4 cups icing sugar
Sift together dry ingredients, except sugar. Beat together oil, eggs and sugar. Fold it into the dry ingredients. Add in the walnuts, pineapple, bananas, pumpkin, sunflower and poppy seeds and mix until combined. Distribute mixture into mini loaf tins and bake at 150C for 20 minutes. Blend together icing ingredients until smooth using a food processor. Top with icing and garnish using your choice of seeds, passionfruit or freeze-dried raspberries.
