This week Michelle Mourits asks how to make the hummingbird cake from Jam at Queenwood.

Mourits says she recently visited Jam cafe and discovered its cakes. "They have the most delicious gluten free hummingbird cake in their cabinet of goodies. I would so love the recipe."

The Hamilton cafe was happy to share its method and we are pleased to provide the recipe. 

HUMMINGBIRD CAKE
Makes 20 

Ingredients:
2 cups gluten free flour 
1 ½ cups sugar 
½ tsp cinnamon 
½ tsp baking soda 
4 eggs 
1 ½ cups oil 
1 ½ cups walnuts 
1 ½ cups crushed pineapple 
3 brown bananas 
½ cup pumpkin seed
½ cup sunflower seeds
½ cup poppy seeds

Icing 
250g softened butter
250g cream cheese
4 cups icing sugar

Method
Sift together dry ingredients, except sugar. Beat together oil, eggs and sugar. Fold it into the dry ingredients. Add in the rest of the ingredients and mix until combined. Distribute mixture into mini loaf tins and bake at 150°c for 20 minutes. Blend together icing ingredients until smooth using a food processor. Top with icing, poppy seeds, pumpkin seeds, passionfruit and freeze dried raspberries.
