Anzac biscuits are apparently evolved Scottish oatcakes, and they're kiwi favourites.

Whether they're warm from the oven, tough as a tranche of slate, or soaked in tea, Anzac biscuits are extra special here in New Zealand.

They're inextricably linked to their namesake, the Australian and New Zealand Army Corps (Anzac), established in WWI because they travelled so well and fed the troops - they've aged well too.

While the biscuits don't garner the same tenuous debate Pavlova does, we've collected our favourite takes on the trans-Tasman treat.

THE PERFECT ANZAC BISCUIT

Nelson foodie Elizabeth Bean is of the thought homemade is definitely best when it comes to a good Anzac bikkie. Bean's preferred way to consume the biscuits is fresh out of the oven, with a good mug of tea. 

GLUTEN-FREE ANZAC BISCUITS

Being gluten-free shouldn't mean you can't indulge in a good cookie when everyone else is, plus these can be vegan-friendly. This wonderful recipe uses quinoa, so you don't have to worry about those pesky oats messing with your insides.

CHOCOLATE, OAT AND ORANGE MARMALADE COOKIES

They're certainly not a classic Anzac, with the addition of chocolate, marmalade and egg, but who doesn't love a jaffa? Don't let that deter you however, they do keep very well, in true Anzac style.

CARAMEL ANZAC SLICE

It's not a biscuit but it's definitely Anzac, with a touch of creamy-sweet caramel added in. The shortcake base, caramel middle and Anzac-style topping will make this an indulgent post-dawn service treat.
