Cuisine Chop Chop: Shredded chicken salad

In the latest in the Chop Chop video series, Cuisine's Ginny Grant whips up a super-simple, flavoursome shredded chicken salad.

500ml chicken stock
2 skinless chicken breasts
¼ savoy cabbage, shredded
1 carrot, peeled, grated
1 clove garlic, chopped
3cm piece ginger, grated
½ red chilli, chopped
1 spring onion, finely chopped
juice of 1 lime
2 teaspoons sunflower oil
2 teaspoons soy sauce
1 teaspoon sesame oil
1 cup crispy noodles

Heat the stock to a gentle simmer. Add the chicken breasts and simmer for 8-10 minutes depending on size. Allow to cool in the stock. 

Put the cabbage and carrot in a large bowl. In a small bowl mix together the garlic, ginger, chilli, spring onion, lime juice, sunflower oil, soy sauce and sesame oil. 

Shred the chicken with forks and add to the cabbage. Toss the vegetables with the dressing, add the crispy noodles at the last minute and serve immediately.
