Recipe: How to cook a steak
STEAKS WITH MUSHROOM SAUCE
250g mushrooms, sliced (I used Portobello)
1 tablespoon olive oil
2 cloves garlic, finely chopped
2 tablespoons chopped flat-leafed parsley
1-2 tablespoons lemon juice
2 tablespoons sour cream
Have the steaks at room temperature and pat dry with paper towels. Lightly oil and season with salt and pepper. Put into a hot frying pan and cook for 2-5 minutes depending on thickness on each side (as a rough rule, for 2.5cm steak allow 4 minutes each side for rare). Sear the sides then set aside to rest.
Add the mushrooms to the same pan and allow to brown a little before adding the butter and oil. Continue cooking until the mushrooms have stopped releasing liquid and have browned. Add the garlic, parsley and lemon juice and cook for a minute, then add the sour cream, mix well and serve with the rested steak.
