Recipe: Easy fruit and nut oat slice
There are many ways, both sweet and savoury, to enjoy the goodness of rolled oats – and not just for breakfast.
Rolled oats, flour, sugar, baking powder, desiccated coconut, dates, dried apricots, walnuts, ground ginger, butter, egg, vanilla.
In a bowl combine 1 cup each rolled oats, plain flour and white sugar, a teaspoon of baking powder and ½ cup each desiccated coconut, chopped dates, chopped dried apricots and chopped walnuts.
Add a good pinch of ground ginger. Melt 125g butter, cool and whisk in an egg and a splash of vanilla extract.
Fold this through the dry ingredients.
Press mixture into an 18 x 20cm lined slice tin and bake at 180°C for 25 minutes.
Store in a sealed container.
