Recipe: Potato & kumara with curry leaves & mustard seeds
Kumara and potato are brought together by aroma and spice for this wonderful Indian-inspired side dish.
POTATO & KUMARA WITH CURRY LEAVES & MUSTARD SEEDS
Preparation 10 minutes
Cooking 20 minutes
3 roasting potatoes such as Agria, peeled, cut into 3cm cubes
3 orange kumara, peeled, cut into 3cm cubes
about 3 tablespoons olive oil or ghee
6 stalks curry leaves, stalks discarded
1 teaspoon yellow mustard seeds
1 teaspoon brown mustard seeds
Put the potatoes in a saucepan and cover with cold water. Bring to just simmering, add the kumara and simmer for 5 minutes. Drain well.
Heat the fat, oil or ghee in a large frying pan over medium-high heat, add the potatoes, kumara and remaining ingredients and season generously with salt.
Cook, stirring, for about 10 minutes or until golden and crisp.
