Recipe: Warm cauliflower, orange & salami salad
In the latest in the Chop Chop video series, Cuisine's Ginny Grant whips up a warming winter salad.
WARM CAULIFLOWER, ORANGE & SALAMI SALAD
2 tablespoons olive oil
50g salami, cut into batons
1 small cauliflower (or ½ large cauliflower), cut into florets
1 clove garlic, chopped
pinch of chilli flakes
extra virgin olive oil to drizzle
½ cup green olives
½ cup flat-leafed parsley, chopped
Grate the zest of the oranges and set aside. Juice one orange and segment the other. Set aside.
Heat the oil in a frying pan, add the salami and cauliflower and fry until golden. Season well with salt and freshly ground pepper then add the garlic, chilli flakes and orange zest and juice and cover with a lid to finish cooking (adding more water if you need it) until the cauliflower is just tender.
Drizzle with extra virgin olive oil and toss with green olives, orange segments and chopped flat-leafed parsley to serve.
