A Palmerston North woman with a burgeoning pita sandwich empire is hoping her new store will rake in the dough.
Jude Fieldhouse's second Pita Pit store, near the corner of Main St and Ruahine St, opens tomorrow.
The store will create 15 new jobs and its expanded menu will include the option of pizzas and smoothies.
It will be Fieldhouse's second franchise in the city.
Her Cuba St store tied with an Invercargill store for Pita Pit's franchise of the year award in 2012.
That store will continue to operate as normal, but Fieldhouse will be spending more of her time at the Main St store, which has a little more room to breath.
"The store on Cuba St, I love it and it's got a great funky atmosphere, but it is more of a race in and race out sort of thing.
"The Main St one has way more space and will be targeting families and people that want to sit down in store and eat."
The new store will be open until 9pm 7 days a week and is also hoping to lure in commuters travelling to Ashhurst, Dannevirke and Hawke's Bay.
Despite having a hectic couple of weeks in the lead-up to the store's opening, Fieldhouse said having two stores would not spread her too thin.
"I'm flying around everywhere at the moment, a one-woman show, but it's actually gone really smoothly.
"We'll see how it goes, but the franchisers have talked to me about other stores."
