Police said the crash happened shortly after 1pm. The man was driving a Ferrari 360 Spider around a track at the Taupo Motorsport Park when he hit a tyre wall at high speed.
A male passenger in the car was unhurt.
A spokesperson for the park said the track had been booked by the Hawke's Bay Club.
The Ferrari was heavily damaged in the crash, which may have been due to a lack of grip on cold tyres, the spokesperson said.
The driver was treated at the scene by a doctor before being taken to Taupo Hospital where he later died. Police said its serious crash investigation unit would look into the crash on behalf of the coroner.
No further information would be released about the dead man until family members had been advised and a formal identification completed.
