We have no name for this dish - it's just usually referred to as Jay's Chicken Dish or Hmmm Chicken & Noodles.
It is quick, simple and tastes delicious and best of all it's a good way to use up leftover vegetables - just use whatever you have on hand, such as mushroom, capsicum, zucchini etc.
| 400g Chicken, roughly diced |
| 1 tablespoon Oyster Sauce |
| 2 tablespoons Soy Sauce |
| Garlic |
| Ginger |
| 1 cup frozen Mixed Vegetables |
| 1/2 Onion, diced |
| Hokkien Noodles |
| 1-2 cups mixed vegetables, roughly chopped |
| 1. Cook chicken in a pan, add sliced onion.
2. Add in approx 1 tablespoon oyster sauce and 2 tablespoons soy sauce. Crush and add garlic. Grate in ginger to taste. (Great tip for ginger: peel and put in freezer bag - it will keep for ages and you can just grate off to suit your taste.) 3. Add in frozen vegetables. Once it's warm, add in any fresh vegetables you have, stir mix and then add in noodles and mix through. All up this takes about 20 minutes from fridge to plate.
