For the past few weeks I have been a tad homesick, living in the UK during autumn is not something that lifts the spirits especially after spending the last summer in Edinburgh, which resembled more of a Auckland winter than anything else.
To try and lift my spirits I jumped into my kitchen as cooking usually works for me, two days of chopping, slicing, dicing, whizzing, whipping and several happy flatmates later, I still wasn't feeling better.
It wasn't until I whipped open the freezer last night when I saw a pack of pastry and thought, "that's it, bacon and egg pie!", that I noticed myself feeling better.
Fifteen minutes later I was preparing the most simple of meals by placing the pastry in the dish, popping in a few slices of bacon, a few eggs, a wee bit of pepper and then putting another piece of pastry on top.
It smelt and tasted fantastic, and I now know I will get through this autumn knowing that I have the humble bacon and egg pie as my answer to the blues.
