Help get NZ cooking: Ratatouille

|Serves/makes||1 - unlimited|
My favourite thing to cook is ratatouille - as a side dish for anything (or even as a main with pasta and cheese on top).
|1 Onion, diced|
|Oil / butter|
|1 tin Chopped Tomatoes|
|Chilli Powder (Optional)|
|OPTIONALS: Other vegetables, Cheese, Pasta.|
1. Simply cut up an onion, and garlic if you have any, fry with some oil/butter, then add chopped courgettes and eggplant
2. Once soft add a tin of chopped tomatoes, salt and pepper, and if you like it spicy add some chilli powder.
3. If you have other veges you'd rather use you can also change it up.
It's delicious, simple, and has to be good for you.
