One pot recipes: Vegetable soup
The vegetable soup packets from supermarkets or fresh fruit and veggie shops are brilliant - usually under $5 and generally made up of celery, parsnips, pumpkin, kumara, potatoes and carrots (though every packet differs).

This recipe generally makes enough soup to feed two people for about five nights. I make a big batch and put the rest in the freezer for later use.
A delicious, healthy, quick meal that the whole family will love. Serve with some nice crusty bread and enjoy.
I have to credit my mum for this recipe, and her mum and so on. It's been passed on for a while and never fails us. Even the kids love it.
|One vegetable soup packet|
|One tablespoon Marmite or Vegemite|
|250ml vegetable stock|
|250ml white sauce|
|Crusty rolls to serve|
|Cut all vegetables into a similar shape and size.|
|Put all the veges into a large soup pot with a good size tablespoon of Vegemite or Marmite, the stock and water (don't cover the vegetables with the liquid, leave about an inch of vegetables above the water). Boil away until veggies are tender enough to mash.|
|Mash or puree the veges, add the white sauce, stir and season to taste.|
