The barbecue season kicking off so we want to know what's hot on your hotplate this summer. Mark Bixley shares a tip to get that flame-grilled smoky taste.
If you have a slotted grill plate on your BBQ and want a nice smoky taste in your food, get a sturdy cake rack that is big enough to go under the grill but above the gas burner.
Then, get some thoroughly cleaned scoria stones (good if you know someone that lives in a volcanic area, like in parts of Auckland) and place them in a nice layer on the cake rack.
The gas will heat the stones and when oils drip down from whatever you are cooking it will flame and smoke up and give a nice smoky flavor like you get at BBQ chicken restaurants.
It also spreads the heat a bit more evenly and holds the heat well, too.
