Christmas lunch behind bars will consist of roast chicken, roast potatoes, carrots and peas, with apple pie and custard for dessert, for the country's 8500 prisoners.
The meal will cost $4 per prisoner and is designed to meet basic nutritional needs without being lavish.
The sandwiches prisoners usually eat for lunch will be served for dinner instead.
