These tasty looking chips are the perfect accompaniment for a John's homemade burger.

Dripping roasted potatoes
Ingredients (serves 6)
100g beef dripping
1kg agria potatoes, peeled and washed
small bunch of parsley
small bunch of thyme
2 shallots, sliced

Method
Dice potatoes into even chunks and place in salted water. Bring to a simmer and cook until tender, then strain. In a roasting tray, place potatoes, dripping, herbs and shallots and cook at 180˚C until golden (about 20 minutes).
