A shot of watermelon never tasted so good.

Ingredients (makes about 1.2 litres)

½ a watermelon, skinned and deseeded
6 pears, peeled and deseeded
1½ cups water
1 cup sugar
2 tsp sea salt
8 basil leaves, plus extras for garnish
juice of 1 lime

Method

In a large saucepan, combine water, sugar, salt and basil leaves. Bring to a gentle simmer until the sugar and salt has dissolved.
Add the flesh from five of the pears, and simmer for two to three minutes until the pears soften. Remove from heat, add three quarters of the watermelon and lime juice, blend in a food processor and pass through a fine sieve.
Finely dice the remaining watermelon and pear and add to the soup.

To serve

Pour about 80ml to 90ml of soup into small glasses and garnish with basil.
