Crayfish salad

Crayfish is the hero in any dish, especially this one.
Ingredients
3 rashers streaky bacon
100g crayfish tail, cooked
2 radishes, thinly sliced
2 vine tomatoes, cut into wedges
4 stalks Italian parsley
mesclun salad
juice of ½ lime
2 Tbsp mayonnaise (recipe below)
Mayonnaise
4 egg yolks
50g wholegrain mustard
50g Dijon mustard
¼ cup lemon juice
¼ cup white wine vinegar
1 litre canola oil
Put all ingredients, except oil, into blender until well mixed. Pour oil slowly into blender to combine.
Method
Cook bacon until well caramelised and quite dark, then once cooled, break into shards. Roughly chop crayfish tail into pieces and mix in a bowl with all other ingredients.
To serve
Top with mayonnaise and lime juice, and season to your liking.
