Recipe: Fast beef soup
FAST BEEF SOUP
1 litre beef stock
1 swede, peeled, cut into 1cm dice
2 spring onions, sliced
1 sirloin, rump or skirt steak
4-5 leaves or around 3 cups kale, cavolo nero, silverbeet or spinach
1-2 tablespoons of white miso paste
Heat the stock in a saucepan, add the swede and spring onion and simmer gently for 10 minutes or until tender.
Oil and salt the steak and cook in a frying pan for 2-3 minutes each side. Remove and rest before slicing thinly.
Cut the greens into strips or tear into pieces, wash and cook in the frying pan until wilted and tender. Add to the soup along with the miso. Serve in bowls, topped with the sliced beef.
